Superbowl Eats

In case you live under a rock and haven’t heard, the Superbowl is this weekend! I am a Pats fan by birthright. I am not at all deserving of the title, because you can find me pretty much anywhere but in front of the TV during a sports game. I do participate on this one, testosterone filled day, because really, it’s all about the food. And the commercials.
So, Superbowl entertaining. You COULD just grab a case of Bud lights, open a bag o’ chips, and call it a day. But where is the fun in that?
My husband Artie is kind of obsessed with Buffalo wings. Over the last 5 years, I too have grown to love that spicy, salty tang. So why stop with wings? Below I’ve included my recipe for buffalo shrimp.

Personally, I think they are even better if you dredge them in flour and fry them for a couple minutes before you coat them in the sauce, but my recipe calls for you to grill or broil them because I’m usually too lazy to deep fry anything. I could pretend it is because I am health conscious, but that would just be a lie.
I also think game day is a great day for burgers. If you aren’t feeling tough enough to light the grill in this balmy weather, there is no shame cooking them up under the broiler or on a grill-pan. I know turkey burgers get a bad rep but I’m telling you, these are all juicy goodness. They’ve got scallions, and apple and sweet chili sauce cooked right in. You can even form the patties a day or two ahead of time, and cook them up when you are ready. The curried mayo I top them with couldn’t be easier, and it’s just divine. Make that ahead of time too, because you don’t want to be slaving away in the kitchen and missing the game, you want to be screaming at the TV like a Banchee!
Or at least eating yummy snacks and drinking beer with your friends.
I wrote these two recipes a couple years ago. Strangely enough, they are the very first recipes I ever styled and photographed. So it’s kind of hard for me to not have an anxiety attack and throw up when I look at them now. Like I was saying though, good eats.
Grilled Buffalo shrimp and turkey burgers are at least relatively healthy eating in my book. However, if you want to take this healthy snack thing even further you are in luck! Buffalo Shrimp with Blue cheese dipping sauce
* If you choose to fry the shrimp, as I suggested above, you can skip the marinating step.
Serves 6
SHRIMP
1 1/2 pounds peeled and deveined shrimp
1/ 2 cup butter
1/2 cup Frank’s original hot sauce
1 tablespoon honey
1 tablespoon tequila
1 teaspoon old bay seasoning
1/2 teaspoon salt
1. Heat butter, hot sauce, honey, tequila, Old Bay and salt in small saucepan over medium heat.
2. Once sauce comes to a simmer, remove from heat and pour 1/4 cup of the sauce over shrimp and marinate in the refrigerator for up to 1 hour.
3.Remove shrimp from marinade and grill or broil about 2 minutes on each side, until just cooked through. Toss shrimp with remaining sauce and serve with blue cheese dressing.
DRESSING
1/4 cup sour cream
1/4 cup mayonnaise
1/8 cup white wine vinegar
Juice of one lemon
1 ounce crumbled blue cheese
a dash of Worchester sauce
Salt and pepper to taste
Combine ingredients in a small bowl and mix thoroughly. Season to taste with salt and pepper and serve.

Turkey burgers with curried mayo
BURGERS
1 tablespoon olive oil
1 cooking apple (Cortland, Jonagold, Baldwin), peeled and
diced
3 scallions, thinly sliced
1 1/2 pounds ground dark meat turkey
1 tablespoon sweet chili sauce
1/2 teaspoon hot sauce
2 tablespoons chopped cilantro
1 teaspoon salt
1/2 teaspoon pepper
Vegetable oil (for brushing)
1. In a medium skillet over medium heat, heat the olive oil. Add the apple and scallions and cook, stirring often, for 3 to 4 minutes until apples begin to soften and scallions become translucent.
2. Transfer the mixture to a large bowl; set aside to cool.
3. Light a charcoal fire or turn on the broiler.
4. Add the turkey, chili sauce, hot sauce, cilantro, salt, and pepper to the apple mixture. Mix
well with your hands. Shape into 4 large patties.
5. Brush the patties with oil. Grill or broil them for 7 minutes on a side or until cooked through.
MAYONNAISE
1 tablespoon olive oil
1 tablespoon curry powder
1/4 cup mayonnaise
1 tablespoon
lime juice
Salt and pepper, to taste
1. In a small skillet over medium heat, heat the olive oil. Stir in the curry powder
and cook, stirring constantly, for 1 minute. Remove the pan from the heat and set
aside to cool.
2. In a bowl, stir the mayonnaise, lime juice, salt, and pepper until it is smooth.
Add curry oil to the mayo mixture. Taste for seasoning and add more salt and
pepper, if you like.
